Low Carb Cinnamon Almonds!

I have been trying to switch to a lower carb higher fat food plan. I was doing no carbs after lunch but now I am trying to limit them more and replace them with fats where I can. I made these yesterday and they were SO simple. usually a small container of cinnamon almonds costs about 7 bucks. The pre portioned 100 calorie bags are even more expensive than that so I figured it may be more cost effective to make my own.

Ingredients: 2 cups raw almonds, one egg white, 1 tbsp vanilla extract, 1/2 cup truvia, 1 tbsp cinnamon, and a pinch of salt.

Whip the eggs a little bit, but you don’t want them to be stiff. Add in the rest of the ingredients (minus the almonds) and mix them together. pour in the almonds and mix them together.

Spread them out on a greased cookie sheet. Bake at 300 for 15 minutes, mix them up, and bake for another 15.
